Food Name:Classic Vegetable Curry
Food Ingredients:Heat 2 tablespoons of oil in a large skillet over medium heat. Add 1 diced onion, 2 minced garlic cloves, and 1 tablespoon of grated ginger, cooking until softened. Stir in 2 tablespoons of curry powder, 1 teaspoon of ground cumin, 1 teaspoon of ground coriander, and 1/2 teaspoon of turmeric. Cook for 1 minute until fragrant. Add 2 diced potatoes, 2 diced carrots, 1 diced bell pepper, and 1 cup of diced tomatoes. Pour in 1 cup of vegetable broth and simmer until the vegetables are tender.
How to Cook:Once the vegetables are cooked, stir in 1 cup of coconut milk and simmer for an additional 5 minutes. Season with salt and pepper to taste. Serve hot over cooked rice, garnished with chopped cilantro if desired.
